Ingredients: Half of small cabbage shredded 1 cup shredded sweet potatoes 1 cup thinly sliced organic zucchini 1 cup cooked organic quinoa 1/4 cup cooked organic corn 2 tbsp. lime juice 1 medium onion minced 1 tbsp. fresh chopped parsley 1 tbsp. dukkah (optional) if not add 1 tsp fennel seeds Salt to taste 3 tbsp. extra virgin olive oil Directions: Place cabbage, sweet potato, zucchini, corn and quinoa in a large bowl. Mix together and set aside. In a smaller bowl mix lime juice, onion, parsley, fennel seeds,salt and oil. Pour dressing over salad and mix well. If adding dukkah mix it in there also. Chill in fridge before serving.
