Caramelized Onion and Olive Focaccia


INGREDIENTS:

2 1/2 cup sprouted spelt flour

1 tsp sea salt

2 tsp coconut sugar

1 packet yeast

1 3/4 cup warm water

1/2 cup black olives

1/2 cup  green olives

1 medium onions

about 2 tbs of extra virgin olive oil


DIRECTIONS:

Mix dry ingredients in a glass bowl. Add in warm water a bit at a time until dough is formed. Knead dough for a minute or so adding a little more flour if needed. Also add a tablespoon of olive oil while kneading. Place dough back in bowl, cover and let rise for an hour.

 Meanwhile slice up the onion and saute in wide pan on low heat with a dash of olive oil, stirring it every 3 minutes or so, adding a splash of water here and there as needed for about 30 minutes until it becomes caramelized. Can also add a dash of salt if so desired. Also at this time slice up the olives.

Preheat oven at 400 degrees F. Take dough from bowl and knead again and place in a greased baking pan (line with parchment paper) making indentations with finger for olives.  Let rise again for 30 minute.  Add in olives  and caramelized onions. Bake for about 20 minutes or until golden brown and test for doneness with a tooth pick. Remove from oven and cool off. Let sit out for 24 hours or so before eating. Enjoy!
