INGREDIENTS:
3 chayotes peeled and diced
1 bunch organic radish washed and diced
1 medium red onion diced
1/4 cup organic cilantro diced
1/4 cup organic flat parsley diced
1/4 cup extra virgin olive oil
juice of 2 limes
1/2 tsp organic tamarind paste
1 tsp onion powder
1 tsp maple syrup or sweetener of choice
salt to taste
DIRECTIONS:
Combine all ingredients together in glass or stainless steel bowl. Mix well and let sit to marinate for at least 30 minutes in fridge or on kitchen counter. Enjoy with your favorite tortilla chips, topping or as a side.
