INGREDIENTS:
1 bunch Organic Radish
1 package Organic mini cucumbers
half of a big jicama
1/2 thumb size organic ginger
juice of1 key lime
1 tsp onion powder
2 tbs organic extra virgin olive oil
1 tsp parsley flakes or 1 tbs fresh chopped organic parsley
salt to taste
Directions:
Wash all the veggies and cut into bite sized cubes. Place in a bowl. In a separate smaller bowl peel and grate ginger and add the rest of the ingredients. Whisk and taste. Adjust salt if need be. Pour dressing over veggies and mix. This can be eaten right away or chilled for later. Enjoy!
