Ingredients:
1 organic zucchini
1/4 organic red cabbage washed and shredded
1 sweet potato
1 cup pieces of crispy buttercup squash skin ( see recipe under vegetables)
1 tsp extra virgin olive oil
1/2 tsp onion powder
2 tsp fresh parsley finely chopped
juice from 1/2 small lime
salt to taste
Directions:
Wash and spiralize zucchini. Also wash and run sweet potato through spiralizor (won't come out spiralized but it will come out circular and thin). Add these two vegetables in big bowl with cabbage, buttercup skin, olive oil, onion powder, parsley, lime juice and salt. Mix well and voila. Enjoy!
