Ingredients:
1 cup walnuts soaked overnight
3 cups organic cooked quinoa
2 ripe avocados diced
2 cup green peas blanched
1/2 cup diced vidalia onions
1 cup chopped fresh parsley
1/4 cup extra virgin olive oil
2 tbs maple syrup (optional)
1 tsp coriander powder OR 1/2 cup chopped cilantro
1 tsp cumin powder
salt to taste
Directions:
Add all ingredients together in a big bowl and mix well with a wooden spoon. Can be eaten right away or chill in fridge before serving. Enjoy!
