Ingredients:
Salad-
1 5oz pkg organic arugula
1 16oz pkg organic kale
1 bunch asparagus
1/2 cup pine nuts
Dressing:
¼ cup extra virgin olive oil
Juice from 2 limes
4 tsp maple syrup
large onion minced 1 tsp turmeric powder
2 tsp dried oregano
Salt to taste
Directions:
Toast the pine nuts in a pan under medium heat until golden brown. Set aside. Remove fibrous ends on asparagus’ and snap in half. Wash and steam for 2 minutes. Set aside. Cut kale down to bit size and wash along with arugula. In a very large bowl place the mixture of leafy greens, asparagus, pine nuts, sprinkle juice of 1 lime and cheese on top. Cover with plastic wrap and refrigerate until ready to serve.
Meanwhile prepare dressing: In a small bowl add all the ingredients for dressing and mix well. Add the dressing right before serving. This is a big salad so go ahead and share. You can cut ingredient list in half for a smaller portion. Enjoy!
