Ingredients:
1 fresh yuca root or 2 pound frozen yuca
2 sprigs fresh rosemary (about 2 tbs)
2 tbs dry parsley
2 tbs onion powder
3 tbs extra virgin olive oil
salt to taste
Directions:
Preheat oven at 400 degrees. If fresh yuca, remove skin and cut in 2-3 inch pieces. Boil yuca first. Remove from water and let cool down. Cut them down to smaller bite size pieces. Place yuca in baking pan. Add rosemary, parsley, onion powder and salt. Mix with a big spoon making sure yuca pieces are well coated with seasoning. Bake for 15-20 minutes. Half way through cooking mix well again. When done remove from oven and drizzle the olive oil. Mix again and enjoy!
