Tangy Jicama Salad


 Ingredients:

Salad-
5 oz. organic baby spinach
1 medium jicama
1 grated sweet potato

Dressing-
2 organic oranges
3 scallions (green onions)
1/2 cup raw sprouted sunflower seeds
1 small onion
1/3 cup fresh parsley
juice of  one and a half big limes
3 sprigs of thyme
2 tbs of extra virgin olive oil (optional)
salt to taste

Directions:

Wash all vegetables. Place baby spinach in big bowl. Peel jicama and grate in food processor. Grate sweet potato also and place on top of spinach. In food processor add peeled oranges, scallions, sunflower seeds, onion, parsley, lime juice, leaves of thyme, olive oil (if desired) and salt. Run in processor until all ingredients become liquefied and unified (about one minute). Pour dressing over salad and mix well together. Make sure to enjoy this yummy salad with others!
