Ingredients:
3 medium organic sweet potatoes
1/2 cup pine nuts
2 small organic yellow summer squash
1 tsp epice
1 onion diced
1 cup spelt meal
1/2 cup organic barley (crunch factor: can omit if don't want crunch)
1 tbs fresh thyme
3 tbs extra virgin olive oil
1 tsp grape seed oil to grease pan
salt to taste
Directions:
Preheat oven at 385 degrees. Run nuts in food processor for about 40 seconds. Place in large bowl. Grate sweet potatoes, squash, in food processor. Empty into same bowl. Place onions and epic in bowl. Run barley in high powered blender (Blendtec) for about 30 seconds. Pour into bowl. Add thyme and salt and mix well with hands until contents become moist and can hold together. Let sit for about 5 minutes. Knead and form into "finger" shapes. Grease bottom of large baking pan with grape seed oil. Place fingers in pan and bake for about 40 minutes or until golden brown. Remove from oven and drizzle olive oil on top of fingers. Enjoy!
