Split Pea Soup
















Ingredients:

2 cups dry organic split pea
4 cups water
1 cup organic coconut milk ( from:Wilderness Family Naturals)
2 crushed garlic cloves
2 tbs fresh flat parsley chopped
Salt to taste

Directions:

Boil peas in medium small pot until they start to swell and break apart (about 20 minutes). Add coconut milk and simmer for 5 minutes. Add garlic, parsley(leave some behind for garnish) and salt and simmer for 7 minutes. Remove from heat and add fresh parsley to garnish. Enjoy while hot!
