Spelt with Lima Beans























Ingredients:

1 1/2 cup organic sprouted spelt (if not sprouted, it needs to be
 soaked over night before cooking)
3 1/2 cups water
1 1/2 tsp epice marinade (look under dips/spreads)
1 cup frozen baby lima beans
salt to taste
2 tsp organic coconut oil (optional)

Directions:

Bring water to a rolling boil on medium heat in a small pot. Add epice and salt. Rinse spelt under cold water and add to boiling water. When the water is almost soaked up by grains, add the lima beans. Stir and bring back to boil. Cover pot when water is below grains and lower heat to low. Let cook for another 15 minutes under the low heat with it covered. When done, let it cool, fluff with a fork and stir in the coconut oil. Enjoy with a salad and a protein! Its make about 2-4 servings.
