Warm Spelt, Corn and Peas Salad


























Ingredients:

2 cup organic sprouted cooked spelt
1 cup organic peas
1 cup organic corn
2 cups frozen organic spinach
2 tbs fresh chopped parsley
1/4 cup chopped onions
1/4 cup green onions
2 tsp epice
1 tbs extra virgin olive oil
salt to taste
1/3 cup walnut pieces (optional)

Directions:

Saute onions, parsley and epice in a little water.  Add corn and peas and continue to saute for 5 minutes. Next add spinach, and walnut (if adding). Saute for another 5 minutes then add cooked spelt. Finish off with salt to taste and olive oil. Turn of heat and let cool down some before serving. Enjoy!
