Stir Fry Millet with Curry and Veggies














Ingredients:

2 cups organic millet
1/2 tsp turmeric
1/4 tsp fennel seed
8 oz fresh or frozen string beans
1 grated sweet potato
1 medium onion diced
1 tbs onion powder
1 tsp curry powder
2 tbs organic unrefined coconut oil
Salt to taste

Directions:

Cook millet according to package directions adding turmeric and fennel seeds while water is boiling. When done fluff with a fork and place in large plate to cool down. In a heated ceramic pan add string beans, grated sweet potato and onions. Use a little water to saute vegetables for 1 minute. Add millet and stir. Add curry powder and salt, stir again and remove from heat. Drizzle coconut oil and stir well. Serve while hot.
