Curry Black and Green Lentils


















Ingredients:

1 cup dried organic black lentils
1 cup dried organic green lentils
6 cups of water
2 scallions diced
1 tbs diced fresh ginger
1 medium onion diced
1 cup cashew milk(or any other)
1 tsp dry parsley
1/2 tsp cumin
1 tsp curry
1/2 tsp turmeric
1 tsp maple syrup
salt to taste

Directions:

Rinse lentils and boil in water for about 30 minutes or until they start to swell and break down. At that point add fresh diced onion. Stir and simmer for 5 minutes. Add dried/powder spices. Stir and let simmer another 5 minutes. Add milk, maple syrup and salt last. Stir and simmer another 5 minutes. Remove pot from stove. Enjoy while hot with grain of choice!
