Italian Spelt Sausages


















 

Ingredients:

3 cups water 


1 tbs epice


4 cups spelt flakes or meal


2 tsp maple syrup


2 tsp sage powder


2 tsp onion powder 


2 tsp dry oregano


2 tsp dry basil


2 tsp dry parsley

1/8 cup ground flax seed 


 1/8 cup pecans


 1/8  cup walnuts


 1/8 sunflower seeds


 1/2 cup Kalamata olives


 1/4 bunch fresh parsley


1 small yellow onion


Extra virgin olive oil


Directions: 


Heat oven at 375 degrees. Run spelt through food processor for 30 seconds. Pour in big mixing bowl. Run nuts and seeds through food processor for 30 seconds too. Pour in same bowl. Pulse onion, parsley and olives in food processor for about 10 seconds. Pour that mixture in bowl also. Add ground flax seeds. Mix well. Combine water, dry seasonings, and maple syrup  in a saucepan and bring to a boil. remove from heat.  Add to spelt mixture and mix with wooden spoon and let sit for about 10 minutes. Kneed by hand. Use an ice cream scoop and scoop unto oiled parchment paper.  Roll in greased paper forming sausages. Place them onto a greased baking sheet and bake for 30-45 minutes. Remove from heat, let cool and drizzle olive oil on each sausage. Enjoy!
