Ingredients:
Half of a medium cabbage shredded
1 bunch organic Tuscan kale thinly sliced
2 big organic zucchini run through a Spiralizer or Veggetti
1/2 cup pecans pieces
1/4 cup organic sunflower seeds
1 cup fresh parsley thinly sliced
1 tsp fennel seeds
juice from one lime
6 garlic cloves mashed with pestle and mortar
salt to taste
1/4 cup extra virgin olive oil
Directions:
Wash vegetables before shredding or spiralizing. Place cabbage, kale and zucchini in large bowl. Add in pecans, sunflower seeds, parsley and fennel seeds. Mix together lime juice, garlic and oil. Pour on salad. Mix well. Add salt to taste and mix well again. You can chill it in the fridge for 30 minutes or eat right away. Enjoy!
