Nutty Tofu Balls

















Ingredients:

Shan tofu (recipe under protein) use whole amount made
1/2 cup pecan
1/2 cup sunflower seeds
1/4 cup walnuts
1/2 cup Brazilian nuts
juice of two limes
1 big onion diced
1/2 cup chopped fresh parsley
1 tbs onion powder
1 tbs epice
1 tbs turmeric powder
1 tsp dry basil
pinch of salt
1.5 cups sprouted bread crumbs
2 tsp coconut oil divided
4 tbs extra virgin olive oil

Directions:

On  medium heat, use a frying pan and caramelize onion and epice in 1 tsp coconut oil, a little water and a pinch of salt. Set aside. Crumble tofu with fork in a big mixing bowl. Run pecans, walnuts, Brazilian nuts and sunflower seeds in food processor and add to tofu bowl. Add the caramelized onions and epice with rest of ingredients except the olive oil. Mix well with big wooden spoon or hands. Let sit for 10 minutes. Preheat oven on 400 degrees. Grease bottom of baking sheet with the other 1 tsp coconut oil. Form balls and and place on baking sheet and bake for 30-45 minutes or until golden brown or slightly darker. Remove from oven and let cool. Drizzle the 4 tbs olive oil on balls. Enjoy!
