3-5 medium small malanga
3-5 medium small eddo
2 tbs za'atar seasoning
1 tbs extra virgin olive oil
salt to taste
Directions:
Preheat oven to 385 degrees. Peel, cut in 1/2 inch circles and wash malanga and eddo. Place in greased baking dish (use a little coconut oil or grape seed oil) and season with za'atar and salt. Bake for 30 minutes or until golden brown. Remove from oven and drizzle with olive oil. Enjoy as chips or as side dish!
