Ingredients:
1 large flatbread (see recipe under pasta/grains), omit sweetener and use sprouted kamut grain
Topping:
16 oz frozen organic spinach
1/2 purple onion
1/4 cup vegan pesto (see recipe under "dips/spreads")
2 tbs black or green olives sliced
1 tbs onion powder
1 tbs dry parsley
1 tbs dry basil
salt to taste
1 tbs extra virgin olive oil
Plant Cheese:
1/2 cup almonds or any nuts
1 tbs Italian seasoning
1 tsp fennel seeds
salt to taste
Directions:
Run cheese ingredients in food processor until well blended together and set aside. Saute spinach with onions, onion powder, parsley, and salt in a skillet. Spread pesto sauce on flatbread. Layer with fresh pesto followed by spinach mixture, olives, and vegan cheese. Bake at 390 degrees for 15-20 minutes. Remove from oven and let cool. Drizzle with olive oil and voila! Enjoy!

Oh wow! The flatbread was also homemade.I love pesto! I think i will do something similar to this pizza.
