Shan Tofu Stir Fry


























Ingredients:

4x4 block of shan tofu more less cut into cubes [see shan (chick pea tofu) under vegetable protein]
1 small onion sliced
2 tbs grape seed oil to pan fry OR 1 tsp to grease pan to bake
3 sprigs of thyme
1 tbs of epice
1 tbs maple syrup
1 tbs sesame oil OR extra virgin olive oil (to drizzle on stir fry when done)
salt to taste

Directions:

Under medium heat, stir fry shan tofu until golden brown in a skillet. If baking instead, set oven to 400 degrees, grease pan, place tofu in pan and bake for about 20-30 minutes; until golden brown. Set aside. Saute onions along with epice and thyme for about 5 minutes (use water to saute). Add in tofu, maple syrup and salt. Stir and let cook for 3 minutes. Turn off stove and add in oil. Mix and voila! Enjoy!
