Shan(chick pea) Tofu




















Ingredients:

1 1/2 organic chick pea flour
2 cups water divided 
1 tsp turmeric (optional)
1 tsp grape seed oil or any other mild tasting oil
salt to taste

Directions:

Mix flour, salt and turmeric (if you used it) in a bowl. Grease a small, shallow, square baking dish. Add 1 cup water and whisk until smooth. Boil the other 1 cup water on medium heat. Add the chickpea flour and water mixture (use a spatula) and lower heat to medium-low. Whisk over the heat until the mixture becomes really thick and glossy. This should take between 4-8 minutes.You can taste at this point to be sure it's cooked and to adjust salt.  Pour immediately into the prepared baking dish, smooth over with spatula and leave to cool at room temperature for at least 1 hour. Cover it up and place in fridge for another 3-4 hours or over night. Remove from baking dish and store into air tight container. This is good for 3 days in the fridge. Enjoy!!!

Note: This recipe is for extra firm tofu. If you want a softer tofu add about another 1/2 cup water to recipe and divide appropriately.
