Ingredients:
1 box organic pasta of choice
1 cup vegan pesto (see recipe under dips/spread)
3 Vegan sausages of choice cut in half (optional)
1/2 cup oven roasted tomatoes
2 tsp onion powder
1 tbs dry parsley flakes
small diced onion
1/4 cup extra virgin olive oil
salt to taste
Directions:
Cook pasta according to package. Drain and rinse under cold water and place in a big mixing bowl. Add rest of other ingredients and mix well. Let chill in refrigerator for about an hour or so. Serve with your favorite veggies! Enjoy!
