Ingredients:
6 big sized sweet potatoes or yams
1/4 cup vegan mayo
1/4 cup coconut oil
1/4 cup maple syrup (more or less)
1/2 tsp salt (more or less)
1/2 tsp Chinese 5 spice
zest of 1 lime
Directions:
Wash and bake sweet potatoes/yams with skin for an hour or so until fully cooked on 400 degrees. Remove from oven and let cool down. Once cooled, peel skin off, place in a mixing bowl and and mash with a fork. Gently mix in rest of ingredients. Adjust maple syrup and salt according to taste. Serve warm. Enjoy!
