Sweet Potato Shepard's Pie


















Ingredients:

ground lentil protein (see recipe under veggie protein)
5 large organic sweet potatoes baked
1 pkg frozen organic sweet peas
1 tsp epice
1/2 cup plant milk of choice
2 tbs coconut oil + additional for greasing pan
2 tbs maple syrup
1/2 tsp salt

Directions:

Preheat oven to 400 degrees and grease a 9 x 13 pan. Let sweet potatoes cool down, remove skin and mash with a fork until smooth (you can use a hand mixer if you wish). Add in salt, maple syrup and coconut oil and mix well. Set aside. Saute sweet peas with epice for about 5 minutes on medium heat with a dash of salt. Grab pan and layer ground lentils at the bottom followed by sweet peas, milk, and smooth over sweet potato mixture. Bake for about 15-20 minutes. Remove from oven and let cool. Serve hot or warm. Enjoy!

*Leftovers can be stored for about 2 days
