Ingredients:
2 cups cooked organic sprouted kamut
1 1/2 cups cooked organic sprouted chick peas
1 cup sweet organic corn
1/4 cup cashews (soaked overnight and dried)
2 tbs epice
1 tsp cumin
1 tsp onion powder
2 tbs dried parsley flakes
salt to taste
extra cashew pieces for garnish
1/3 cup extra virgin olive oil
Directions:
In a cast iron pan under medium heat, saute epice for about a minute. Add in kamut and stir for a minute followed by chick peas and corn. Saute for about 5 minutes. Add in cashews, cumin, onion powder, parsley, and salt. Saute for another 5 minutes. Turn of heat and add in olive oil when ready to serve. Add in some cashews as garnish and voila! Enjoy with your favorite side veggies!
