Ingredients:
16 oz package of organic pasta of choice
16 oz package organic chopped kale
10 oz package of spicy greens (mustard greens, watercress, etc.)
1 cup olives of choice
2 tbs capers ( optional)
half of a large red onion sliced
2 avocados
salted water to boil pasta
Dressing:
1/3 cup organic extra virgin olive oil
juice of 2 limes
1/4 cup organic agave
2 tbs epis (under dips/spread)
salt to taste
Directions:
Wash kale and remove hard ribs/stems. Place in Large bowl along with onions. Mix all ingredients for dressing and pour over kale. Put on disposable gloves or use clean hands and massage kale down with the dressing. Place in the fridge. Meanwhile, boil pasta in salted water according to directions. While pasta boils, wash spicy greens and let sit to drain out water completely. Also at this time cut avocados into cubes. Remove pasta and drain. Use cold water to rinse until cold. Take kale out of fridge and add cold pasta, spicy greens, capers and olives. Mix until all ingredients are well incorporated. Taste and balance sweetness and salt to your desire. Add avocados on top and voila! Enjoy!
