Chayote Ceviche



























INGREDIENTS:

3 chayotes washed, peeled and diced into 1 inch cubes
1 bunch organic radish washed, stemmed and cut into 1 inch cubes
1/2 bunch organic cilantro washed and finely chopped
1 organic celery stick washed and diced into 1/2 inch cubes
1 medium sweet onion diced
1 tbs onion powder
juice of 2 limes
1 tsp sweetener ( maple syrup, agave, etc.)
2 tbs extra virgin olive oil
salt to taste

DIRECTIONS:

Mix all ingredients into a stainless steel or glass bowl. Taste and adjust salt and tartness to liking. Refrigerate for at least an hour before serving. Serve as a salad, side or filling and voila! Enjoy!
