INGREDIENTS:

2 cups dried organic lentils (16 oz package)

2 tbs organic extra virgin coconut oil

1/2 tsp organic cumin powder

1/2 tsp organic cardamom powder

1/2 tsp organic turmeric powder

1/8 tsp ground star anise powder

3/4 tbs sea salt

1 large organic red onion or 2-3 organic shallots

2 tbs organic onion powder

2 tbs finely diced organic ginger (skin removed)

2 tbs fresh organic squeezed lime juice

1/2 cup roughly chopped organic cilantro for garnish


DIRECTIONS:

Soak lentils over night, drain and rinse. Boil lentils in medium sized pot with 5-6 cups of water for about 15 minutes. Once cooked set aside. Under low heat heat cumin, anise and cardamom for about 1 minute. Add in turmeric, onion powder and salt for another minute. Add in oil followed by ginger and diced shallots. Sautee for about 5 minutes making sure they don't get burnt. Add lentils to mixture along with lime juice. Let simmer for about 20-30 minutes under low heat. Add extra water if you like your dal runnier, taste and correct salt if necessary. And voila! Serve with organic brown basmati rice or any other grains/ pseudo grains of choice. Enjoy!
