Scramble Shan Tofu



Ingredients:

4x4 block of shan tofu more/less [see shan (chick pea tofu) under veggie protein]
1/2 onion, diced
1 tsp epice
1 green onion, finely sliced
1 tsp onion powder
1 tbs dry parsley
1 tsp turmeric powder
1 tsp lime juice
Salt to taste
2 tbs extra virgin olive oil


Directions:

On medium heat crumble tofu with a fork in cast iron pan with epice. Add onions, and green onions. Stir. Add dry seasonings.  Stir well. Let cook for about 5 minutes or until water is dried out. Stir again. Turn heat off and drizzle oil and let sit until cooled down a little. Serve with bread or root vegetables.
